You know what’s great about the 21 Day Fix (well, among many things)? The whole family eats healthier when I’m taking the program seriously. That these 21 Day Fix Strawberry Banana Popsicles, for example…full of flavor and deliciousness, totally kid-friendly…and completely “fix” approved! Also – they’re ZERO Weight Watchers points!
21 Day Fix Strawberry Banana Popsicles
OK, here’s another thing that’s great about them…they’re really easy to make. Although I did make things a little bit harder on myself by using frozen strawberries. But you know what? That actually ended up working to my advantage.
Read on, reader!
Prep time: 10 minutes
Serves: 10
Here are the molds I used…these are super sturdy and I’ve loved them so far.
Ingredients:
- 2 ripe bananas
- 2 cups strawberries (fresh or frozen)*** – see notes below!
- 1/2 cup unsweet almond milk
Directions:
Put all ingredients in a blender and blend into a puree. Distribute evenly in the popsicle molds. Place in freezer until frozen through.
Serve and enjoy once frozen!
OK, so if you have fresh berries, go ahead and make exactly as the directions above read. But if you have frozen strawberries, let them thaw first or thaw them yourself in a pan over low heat. I kind of LOVE the juice that comes off of frozen strawberries…it’s just so darn sweet (and totally not cheating on the fix, as long as no sugar has been added). I thawed my berries in a pan like this and then blended the berries with their juice, the bananas, and the the almond milk. I think that’s why the colors are so vibrant and delicious-looking.
