I recently went to the strawberry fields by my house with my family, and we actually got to pick our own strawberries! I was always too intimidated when I drove by, thinking it would take a long time or hurt my poor li’l back, but it was actually so fun and easy! Our buckets were full after the first row and I found myself wanting to turn around and get another bucket – but what in the heck could I possibly do with all those strawberries?!?! I went home and started searching for ideas, and decided I needed to put some of my favorite 21 Day Fix summer dessert recipes in one place to share with everyone 🙂 They are full of bright colors, bright flavors, and mostly strawberries (I finished them all. Every. Last. One.)

Strawberry Shortcake Martini – You can just count it as a Yellow Drink Swap- this works calorie-wise; or, if you’d prefer, you can count it as 1/2 Purple, 1 Yellow Drink Swap. If you’re using the optional chocolate rim, you will also add 1 tsp to your counts.
Pineapple Upside Down Cupcakes – 1 Yellow (Gluten free & dairy free!)
Brownie Bottom Cheesecake w/ Raspberry Sauce – 1/2 Red, 1/2 Yellow, 1 tsp, 3 tsp sugar (2 tsp without raspberry topping)
Tropical Mango Sundae – If having the entire recipe for your serving, you can count this either as 2 Purple, 1/2 Blue, 1 tsp, 2 tsp sugar OR 1 Treat-swap YELLOW. If having half of this recipe as your serving, it’s 1 Purple, 1/4 Blue, 1/2 tsp and 1 tsp sugar.

Banana Split Pudding – Without Toppings: 1 Red, 1 Purple, 1 tsp sugar; With Toppings: 1 Red, 1 1/4 Purple, 1/2 Orange, 1 tsp, 1 1/4 tsp sugar
Instant Pot Cheesecake – Entire Cake: 4 Red, 1 Yellow, 3 tsp, 1/2 Purple
Cherry Crisp – 1 Purple, 1 Yellow, 2 tsp, 2 tsp agave
Strawberry Rhubarb Crisp – 1/2 Purple, 1/2 Blue, 1/4 Green
Sweet Ricotta Cream Stuffed Strawberries – 1/2 Purple, 1/2 Red
