One of my most popular posts is this Weight Watchers Crock Pot Recipes with SmartPoints post…so I thought I’d create a new post full of Weight Watchers Instant Pot Dinner Recipes for my Instant Pot folks out there!
What I love about Weight Watchers and 21 Day Fix food (want to learn more about the 21 Day Fix? Start here!) is that it’s really just “normal” food – the food we should be eating, in reasonable portions. Somehow along the way, we’ve forgotten how to eat. I’ve used both of these programs with success and believe in Weight Watchers – and I love that there are so many great recipes out there to try these days!

Stuffed Pepper Soup – Freestyle 4 SmartPoints per Serving / 3 SmartPoints – Like a stuffed pepper, only in soup-form.
Chipotle Chicken Tacos – Freestyle 2 SmartPoints per serving / 4 SmartPoints – TACOS, y’all. Tacos.
Goulash – Freestyle 2 SmartPoints per serving / 4 SmartPoints – The whole family will love this easy dinner.
Roasted Chicken Breast and Vegetables – Freestyle 8 SmartPoints per serving / 4 SmartPoints – This one is a classic…you’ll be enjoying leftovers all week long!
Lentil Soup with Sweet Potatoes – Freestyle 4 SmartPoints per Serving / 4 SmartPoints – Another one that will make for great leftovers.
Vegetable Noodle Soup – Freestyle 3 SmartPoints per serving / 4 SmartPoints

Why do the recipes have more Freestyle points than Smart Points? They should be lower if the recipe has a 0 point ingredient. Otherwise, they should be the same as other item Smart Point values haven’t changed.
If you feel they SP values aren’t correct then calculate them. It’s as easy as that.

I just got my Instant Pot so I’m just starting to learn. Your recipe for Chicken Breast with vegetables specifically calls for boned-in chicken breasts. Can it be done with boneless? And if so what adjustments do you need to make?

Hi Marv! I haven’t made that recipe (it’s just one I shared), but I do believe that bone-in chicken needs more time to cook, so you would change this recipe with boneless. The Instant Pot is so easy (you’ll love yours!), but it can be a little tricky to master meat in the beginning so I’d find a boneless recipe to try until you have the bone-in chicken. 🙂
