These healthy one-pot dinners are a great way to cut back on cooking in the evenings. Let’s be honest. After a long day of work, running errands, and keeping up with your daily routine it can be really hard to find the energy to cook. Add the mess you made while cooking your meal and it all becomes just too much. I am here to help ease your evening workload. On top of saving you time and a bunch of pots and pans to scrub all of these one-pot dinners are healthy and comforting.

I’ve recently updated this post. The original posted just contained dinner recipes but I’ve also added some one-pan breakfast recipes, because why should dinner get to have all the fun, right?! Most of these also make for some fabulous leftovers…and many of them will freeze well, too!
