Let’s talk fajitas. I mean…everyone likes a good fajita, right?! Charles cooks a lot for us, and I love it when he makes fajitas. Because I’m picky (and so are my kids), he always makes a side of super mildly-spiced chicken for the sensitive ones in the house (me and the kids) and then kicks the spice up for his own. These Chicken Fajita Lettuce Wraps with Cilantro Lime sauce are a great recipe to add to your meal planning rotation – you can easily customize these to everyone’s liking.

You’re going to love these because they combine a homemade fajita seasoning with the ease of rotisserie chicken. This is also a great recipe to meal prep for, as you can cook chicken in advance if you’d prefer doing that to using a rotisserie chicken. I recommend preparing the fajita seasoning in advance (you can make an extra large batch so you’ll always have some around). I also recommend making the Cilantro Lime sauce at least the night before so the flavors can blend. Throwing this recipe together will take no time with those simple prep steps! But even if you do it all at one, this recipe comes together in about 30 minutes.

How to make Low-Carb Fajitas

You know we love fajitas! Some of my most popular recipes on the blog are these Sheet Pan Fajitas and these Instant Pot Tri-tip Fajitas. You can make any of those recipes lower carb by swapping out the tortillas for lettuce wraps, just like we’re doing here. 

This recipe also includes a protein-packed cilantro lime sauce. I recommenr making this sauce the night before so the flavors can thoroughly blend.

What lettuce is best for fajita wraps?

We used romaine for these lettuce wraps. Romaine is fantastic because the leaves are just the right size for filling. We will also use butter lettuce or bib lettuce (especially for things like these BBQ pork wraps – butter lettuce is also a great size and nice and sturdy). 

The best lettuce for this recipe is your favorite lettuce. 🙂

Don’t forget: For best results, prepare the cilantro-lime sauce the night before so the flavors have a chance to thoroughly blend. You can also prepare the fajita seasoning in larger batches and store in an airtight container for later use. 

If you don’t like spicy…leave out the cayenne and make sure your chili powder is mild!

What is the best part of the rotisserie chicken to use for fajitas?

To keep this Weight Watchers and 21 Day Fix-friendly, be sure to use skinless meat from the chicken breast. The leg and thigh, or any meat with skin on it, will increase the points (which is fine, just make sure you’re counting it). Some recipes that would be great for the remaining meat would be this Spicy White Bean Soup or this Kale Blueberry Salad. There are lots of ways to use up your rotisserie chicken!

Ingredients
  

Homemade Fajita Seasoning

  • 3 tbsps chili powder
  • tbsps smoked paprika
  • 2 tsps onion powder
  • 2 tsps garlic powder
  • 2 tsps ground cumin
  • ½ tsps cayenne pepper
  • 1 tsps dried oregano
  • 2 tsps sea salt

Cilantro-Lime Sauce

  • 1 c plain low-fat Greek yogurt
  • 1 tbsps homemade fajita seasoning
  • 1 clove garlic peeled and finely minced
  • 2 tbsps fresh cilantro finely chopped
  • 2 tbsps fresh lime juice
  • Salt and pepper to taste

Fajitas

  • 2 tbsps extra virgin olive oil
  • 1 red bell pepper sliced thin
  • 1 green bell pepper sliced thin
  • 1 yellow bell pepper sliced thin
  • 1 orange pepper sliced thin
  • ½ small red onion sliced thin
  • 1 tbsps balsamic vinegar
  • Salt and pepper to taste
  • 3 c rotisserie chicken shredded
  • 2-3 tbsps homemade fajita seasoning
  • ¼ c chicken stock preferably organic
  • ¼ c fresh cilantro roughly chopped
  • 3 green onions green parts only, sliced
  • 2 tbsps fresh lime juice
  • 1 Romaine lettuce washed and separated into individual leaves

Instructions
 

Fajita Seasoning

  • If you don't like spicy, leave out the cayenne and make sure your chili powder is mild.
  • Prepare the fajita seasoning by combining all ingredients in a small bowl and stirring until thoroughly blended. Store any excess in an airtight container for later use.

Cilantro Lime Sauce

  • Prepare the cilantro-lime sauce by thoroughly combining all ingredients in a medium glass or other non-reactive bowl. Cover and place in the refrigerator until ready to use.

Fajitas

  • Heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, onion, and balsamic vinegar to the skillet and season with salt and pepper, to taste. Cook for 10-12 minutes or until the onions and peppers are crisp tender.
  • Add the shredded rotisserie chicken, fajita seasoning, and chicken stock to the skillet and stir to combine. Cook until heated through and excess liquid is gone, approximately 3-4 minutes. Season with additional salt or fajita seasoning, if desired.
  • Remove skillet from heat and stir in the cilantro, green onions, and fresh lime juice. To serve, spoon mixture onto individual Romaine lettuce leaves and top with a drizzle of cilantro-lime sauce. Enjoy!

Excellent! quick and easy to make!

The fajitas were so spicy that my family had to thrown the entire meal out – and my husband is a spicy food fanatic! Not sure what went wrong here, and I am not a novice in the kitchen. Created the spice blend to the T, and based on the results, something I will not be making again.

How many wraps per serving? And how much mixture? Just made this and is curious on how much a serving thanks!

hello maybe you can answer my question? if you use the 45 calorie bread is one slice one yellow or is it the 2 slices and when you put chicken in the red container you just fill it up and not push it down right,the only reason i ask is cause of ground turkey i seen on another vidoe they said to push the turkey down. thanks for your help

Is there a way you can tell me where all the sodium is coming from? For such a small meal. I made this for my husband and he LOVED it!! But feels there is a lot of unhealthy amounts of fat and sodium for his diet. It’s feels like low carb bud high everything else, but I totally enjoyed trying this out! However I. Forgot to order the Greek yogurt and used 1/3 less fat cream cheese. Along with with everything else listed to make the sauce.

I’m new to the 21 day fix eating plan. If I make this recipe, it makes 4 servings that equal 1 1/2 red, 1 1/2 green, 1 1/2 tsps. If I divide it only into two, then it equals 3 red, 3 green, and 3 tsps?
