One thing I love about Weight Watchers is that you do NOT have to give up your favorite foods. These Weight Watchers Mexican recipes are proof of that! These yummy dinners are all super delicious. You’ll never feel like you’re depriving yourself. Plus, many of these make for some great leftovers.
Which Mexican food is the best to eat on Weight Watchers?
Generally speaking, the food with the lowest points will include lots of veggies and lean meats, and not a ton of oil. If you’re eating tortillas, you’ll find that corn tortillas are the lowest point option. And of course you’ll want to avoid adding lots of extra cheese and sour cream. This doesn’t mean you can’t have cheese (by all means, eat the cheese!). It just means that you need to watch the portion size. Also, a great tip is to sub out low-fat sour cream for regular sour cream (you could also swap it out for Greek yogurt, but Greek yogurt ain’t foolin’ me…).
All of the recipes you see here have points included in the post. Because WW changes their points systems up every now and then (ahem, all the time), you may need to confirm that the points reflect your current plan.
Are there any good WW Instant Pot Mexican recipes?
There are so many ways to use your Instant Pot, and the answer is YES! I’ve got several Instant Pot recipes here for you to choose from.

Yep – I’ve got some great Crock Pot options for you, too! The Crock Pot is a great tool for meal prepping. I use mine all the time, and I love how I can throw something in the Crock Pot in the morning and have dinner ready in the evening!

OMG! I didn’t know you were in SD!!!! I grew up in Newport Beach, and my husband & I ended up working and living in Oceanside/Carlsbad/ La Jolla!!!! We spent soooo much time driving into the city. I loved SD!!!!! In fact, we left Calif in ’90 to come to Florida, mostly because we decided we wanted to move into SD but just couldn’t afford to live where we wanted to, at that time. So. It is a small world. What happened to Texas???!!!!
Debbie!! OMG that’s crazy! Polly is my sister and she lives in Carlsbad, where I have also lived (I grew up in that area and moved to Texas in 2004)…my dad and brother also live in Carlsbad (my dad grew up there). We grew up in Vista. We were just there in April. Now that I don’t live there and can never afford to again (lol), we love taking the kids to visit! <3
