There are so many things to love about this recipe. These 21 Day Fix and WW Chicken Burrito Bowls, which were created by my friend Chellie over at Art From My Table, are super healthy and full of whole foods. Also, they’re kid-friendly. Because of the nature of this recipe, you can add what you want to your burrito bowl and leave out the things you don’t want…perfect for picky eaters!
Also, because this recipe is deconstructed, it’s really easy to figure out your container counts if you’re on the 21 Day Fix. You can measure out your portions as you put your bowl together (see below for container counts following Chellie’s recipe, though!). Same for Weight Watchers…you can add or remove items depending on your daily points allowance!
21 Day Fix Chicken Burrito Bowls
Here are the ingredients you’ll need to make them (feel free to tweak as you see fit…this is super customizable!):
What I love about this recipe is how simple it is…and also how it’s one of those things you can make for the whole family. You can let picky eaters pick their toppings! it’s kind of like DIY pizza night but with fewer carbs.
This recipe is great for the 21 Day Fix and WW, but as you can probably tell you can also make it work really well for any low-carb, high-protein meal plan.
Chicken Burrito Bowls
Ingredients
- 1 tbs extra virgin olive oil
- 2 chicken breasts
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 c black beans
- 3 c diced orange bell pepper or, do one of each – green, orange, red
- 1 c diced tomato
- 1/2 c frozen corn thawed
- 1/2 c green onions
- 1/2 c cheese
- 1 c cooked brown rice
Toppings
- Greek yogurt or sour cream
- cilantro
Instructions
- Slice chicken breasts in half length wise to give you four thin breasts, this will cook much easier. Combine chili powder, garlic powder and cumin together. Rub on the chicken breasts.
- Heat oil in pan over medium high heat. Cook chicken breasts about 4-5 minutes on each side or until cooked through.
- Cut chicken into bite size pieces, set aside.
- Warm black beans on the stove top.
- Divide the rice, beans, chicken and remaining ingredients into 4 bowls. Top with plain Greek yogurt, cheese and cilantro.
I have been obsessed with burrito bowls lately! Over lots of cauliflower rice and topped with hot sauce and avocado 🙂

Hi Rachelle! The tomatoes are green and the beans are a yellow, so I would just measure the food you put on your plate with the actual containers so you know exactly what you’re getting. You might double up on some of the other veggies to make a serving a full green!
Did you cook the corn or just use it thawed?
Thawed, but you could cook if you preferred!

This burrito bowl is awesome! It was super easy to make and needed a change from salads every day for lunch. I forgot my corn, but still turned out awesome! I really was worried about liking this, but turns out I love it! I ended up using a packet of Organic Quinoa & Whole Grain Brown Rice instead. I didn’t have to cook the rice in advance and cut down on my prep time even more! Love how easy and delicious it is. Thank you! I look forward to more of your recipes. 🙂
Giving this a try in my meal prep plans for next week! I also want to throw it out there that one of my favorite variations on bowl recipes like this one is to blend lime juice and fresh cilantro with my Greek yogurt for a little extra zing. 🙂

Do you know if this has ever been mixed together and frozen? Does it freeze well?
I’ve never tried that but I think you’d be okay with some of the ingredients. I feel like the tomatoes and the beans would get soggy when they thaw. Generally, I try to avoid freezing anything with a high moisture content.
What do you do with the bell peppers?
