Veggie lovers: you’re going to love these!
Non-Veggie Lovers: you’re going to love these, too! No, really…I’m going to help you eat your veggies and even like it. These 21 Day Fix veggie pancakes are simple to make, delicious to eat, and super versatile, too (serve them with eggs, serve them with chicken, serve them with even more veggies…there are lots of ways to use these in your favorite recipes).
Another thing to love about these veggie pancakes: they only need two ingredients. But, you can customize them with any veggies you like. Which makes these a great way to get rid of veggies that are close to expiring.
21 Day Fix Veggie Pancakes Ingredients:
- 1 cup grated cauliflower (about half a cauliflower, grated by hand, or one cup cauliflower rice…I put mine through the food processor because I like it fine)
- 1 egg
- Optional: use any veggie you like! You’ll want about one cup of the veggie, grated or finely diced. Feel free to mix them up. I have used zucchini, bell peppers, and carrots.
Here’s how to make them:
Prep your veggies. If you’re using cauliflower, grate half a head of cauliflower with your cheese grater. I will sometimes use cauliflower rice (buy it in the refrigerated or frozen section of your grocery store…I get mine at Costco). I think the cauliflower rice is a bit chunky, so I run it through a food processor first. Sometimes, I’ll do a big batch and then save it in the fridge until I’m ready to use it.
Mix the cauliflower in a bowl with one egg.
Spray a pan with cooking spray (or use olive oil…the choice is yours!).
Let the pan warm up and then drop the cauliflower and egg mixture into the pan. This makes two “pancakes” – form them into circles with your spatula.
Cook for a few minutes (you’ll know it’s ready to flip when you can pick up an edge with the spatula and see that the bottom has browned). Flip and cook on the other side.
Once done (I like mine a little on the crispy side, but that’s personal preference), stick on a plate and add a fried egg. SO GOOD, you guys.
If you don’t want to eat an egg with this, these are easy to whip up and go well as a side dish to any protein.
I will sometimes make these with just zucchini and egg, but I try to add cauliflower when I can…there’s something about it that makes the texture a little more pancake-like.
This recipe makes two pancakes (or one giant one…that’s fun, too!).
