What you might not know that I am also a huge fan of parfaits, but many parfaits are made with pudding or sugary yogurt...and so, not something I often make at home because the rare times I do cook or bake, I usually make something healthy.

These pumpkin pie parfaits are made with Greek yogurt, pumpkin, and oats...all tied together with maple syrup and pumpkin pie spice.

21 Day Fix Pumpkin Pie Parfait

Here's how to make your Pumpkin Pie Yogurt Parfaits:

Serves: 4 

The granola recipe is super simple to make, but you can leave it off or cut the serving back to save on your yellow containers. Also, most parfait recipes call for a lot of sugar to sweeten them up. This uses pure maple syrup as the only sweetener. You get four teaspoons of sweetener on the 21 Day Fix. If you're not making the granola, you can spread that extra tablespoon of maple syrup across the rest of the recipe, or save it to use as a topping!

Ingredients:

  • 3 cups Greek yogurt
  • 1 can 100% pure pumpkin (canned is fine, or you can make your own)
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon pumpkin pie spice

For the granola:

  • 1 cup rolled oats
  • 1/4 teaspoon salt
  • 1 tablespoon melted butter
  • 1 tablespoon pure maple syrup
  • 1/4 teaspoon pumpkin pie spice

To make the granola:

Turn the oven on to 350 degrees Farenheit. In a bowl, mix the oats, salt, melted butter, maple syrup, and pumpkin spice. Mix until the oats are coated with the syrup and butter.

Spread on a nonstick baking sheet and bake for 30-40 minutes, stirring every 10-15 minutes with a wooden spoon. You'll know they're ready when they're golden brown and crispy.

To make the parfait:

You'll need two medium mixing bowls.

In one, mix the Greek yogurt, 1 tablespoon of maple syrup, and the vanilla. You can use a hand mixer or just stir it really well. I like using the hand mixer because I feel like it makes the Greek yogurt a little smoother and thinner.

In the other bowl, mix the pumpkin, 1 tablespoon of maple syrup, and the pumpkin pie spice. Again, use a hand mixer or just stir/whisk it really well.

To put it all together:

One serving size equals 3/4 cup of yogurt, 1/4 cup of pumpkin, and 1/4 cup of the oats. You will have some pumpkin left over...this is really good mixed with some ricotta or even more yogurt!

Using a spoon, layer the parfait like this: yogurt, pumpkin, granola, yogurt, granola. If you have the teaspoons left, you can add some maple syrup as a topping!

If you're making these ahead of time, don't add the granola until you're ready to eat it. It will get soggy if you add it to the granola and leave it for too long.

One quick question….did you use plain Greek yogurt or vanilla yogurt? Made the granola but wanted to check on the type of yogurt used. Thanks!
