I love potatoes. I love them all, in almost any form (I can’t do hashbrowns unless they are super duper extra crispy, though – you can find that story here). But I really love a good baked potato. Give me a baked potato loaded with toppings and I will love you forever.

Turns out, the Instant Pot makes some pretty amazing potatoes. No, they’re not technically baked, but I’m calling them that. I used some leftover Mexican shredded chicken (also from the Instant Pot) to make these 21 Day Fix Instant Pot Baked Sweet Potatoes, and they are my everything. Or at least, they were last night when I was devouring one.

I normally microwave my sweet potatoes, because I am lazy like that. It takes about 6-7 minutes in the microwave. The Instant Pot, from start to finish, was around thirty minutes – but I did four potatoes, and I didn’t have to poke a bunch of holes in them with a fork. Which is good, because I always feel pretty certain I’m going to stab myself when I do that.

I used leftover chicken, Greek yogurt, a teeny bit of cheddar cheese, and chives to top them. You could use butter, Greek yogurt, chives and turkey bacon as an alternative.

Serves: 4

Serving size: 1 medium sweet potato with toppings

READ THIS BEFORE YOU MAKE THESE: This recipe is based on medium (maybe even on the small side of medium) sweet potatoes cooked in a 6qt Instant Pot. If your potatoes or your pot are bigger, you’ll need to adjust accordingly. And one thing I’ve learned about Instant Pots is that, for whatever reason, several people can cook the same recipe and have slightly different results. So bear that in mind and if you think yours need to cook longer, or less, make the adjustments.

Also, altitude can affect your cook time – here’s a really helpful post about how to adjust your pot for altitude.

Ingredients:

  • 4 medium sweet potatoes, washed and scrubbed
  • 1 cup Greek yogurt
  • 1 cup shredded chicken (rotisserie or leftover)
  • 1/2 cup shredded cheddar cheese
  • Chives (to taste)
  • 1 cup water
  • Instant Pot trivet that came with your pot

Set your trivet in your pot and add the water. Add your potatoes.

Lock the lid in place and set the valve to seal. Set the pot to pressure cook (or manual, depending on your pot) on high for 10 minutes.

Let the pressure release naturally.

Carefully remove potatoes from pot. Mine sat out for a while to cool and dry off, and then I cut them open and filled each with 1/4 cup each of chicken. Add 1/8 cup cheese to each potato, then top with 1/4 cup Greek yogurt and chives.

Of course, you can always add more toppings! Just be sure to count them when you tabulate your containers. 

These are super easy, and a great way to use up things like chicken and yogurt that you have sitting around.

The 21 Day Fix program is always changing, and while I do my very best and never want to mess up (perfectionist, yo) please always double check the container counts yourself.

Container counts, per serving (I always round up to the nearest 1/4 cup):

  • 1 yellow (for a medium potato!)
  • .5 red
  • .5 blue
