I think green beans are my favorite beans. They’re so versatile! You can eat them raw, roast them, steam them and serve them as a side, or even turn them into something pretty not-healthy like Green Bean Bacon Casserole (speaking of…I need to work on a healthier version of that recipe!). 

You can also eat them in a flavorful 21 Day Fix green bean salad, like the one I’m sharing here.

21 Day Fix Green Bean Salad

The 21 Day Fix is one of those eating plans that you’ll never go hungry on.  That’s because most of the foods are very rich in nutrients, and those fill you up faster than the empty calories you consume when you eat sugary, processed foods. This is an example of one those nutrient-rich meals. Pair this with some grilled chicken or the protein of your choice, and you have the perfect dinner. 

Plus, this will make great leftovers. Enjoy it all week!

21 Day Fix Green Bean Salad with Tomatoes and Feta

It takes less than 20 minutes to put together and can be enjoyed either warm or cold.

21 Day Fix Green Bean SaladPrep time: 10 minutes
Cooking time: 7 minutes
Serves 4-6

Ingredients:

1½ lbs. fresh green beans, tips removed and cut in half
1 pint grape tomatoes, washed and cut in half
1 T. fresh basil leaves, finely chopped
1 T. fresh parsley leaves, finely chopped
3 T. extra virgin olive oil
2 T. sherry vinegar
Sea salt and black pepper, to taste
1 c. Feta cheese, crumbled

21 Day Fix Green Bean SaladDirections:

Over high heat, bring a large pot of salted water to a boil. Add green beans and cook until crisp tender, approximately 3-4 minutes. Drain the green beans and then transfer to a large bowl of ice water to prevent further cooking.

Remove green beans from the ice bath and pat dry before adding to a large glass or other non-reactive bowl. Add the tomatoes, basil, parsley, olive oil, and vinegar to the bowl and toss to combine. Season with salt and pepper, to taste.

Gently fold in crumbled Feta cheese and serve immediately. Salad can also be chilled and served cold.
