21 Day Fix Watermelon & Lime Salsa Fresca

This recipe is perfect for the season. It’s bursting with flavors and also a great way to use up watermelon. You can eat this alone or serve with tortilla chips. You can make your own Honey Wheat Tortilla Chips – or you might want to try this technique for making your own! Or, of course, you can grab a bag of your favorite chips at the store, too! I love an excuse to stock up on tortilla chips. 

This recipe is great for parties. It’s 21 Day Fix and Weight Watchers-compliant. It’s also vegan.

21 Day Fix Watermelon Salsa

Ingredients for Watermelon Salsa

  • Watermelon 3 cups chopped
  • Lime ¼ juice
  • Lime zest 1 ½ tsp
  • Mango 1 peeled & diced
  • Cucumber 1 peeled & diced
  • Red onion 1 chopped
  • Jalapeno 1 seeded & minced
  • Basil Leaves 8 chopped
  • Garlic Salt ½ tsp
  • Tortilla chips – you can make your own Honey Wheat Tortilla Chips – or you might want to try this technique for making your own

How to make this Watermelon Salsa

Mix together lime juice & zest. Add the watermelon, mango, cucumber, jalapeno, onion and basil. Toss together. Add garlic salt. Chill until ready to serve.

  • 3 c watermelon chopped
  • 1/4 lime juiced
  • 1 1/2 tsp lime zest
  • 1 mango peeled and diced
  • 1 cucumber peeled and diced
  • 1 red onion chopped
  • 1 jalapeno seeded and minced
  • 8 basil leaves chopped
  • 1/2 tsp garlic salt

Instructions
