I’m a little bit ashamed that I haven’t been sharing more pumpkin recipes with y’all. You can never have too much pumpkin! Unfortunately, my whole family was down with the flu last week and it seriously took a toll on us all…but while everyone else is feeling better, I feel like I’m lagging behind and just can’t quite kick it.
I know I’m feeling better, though, because my appetite is creeping back and this 21 Day Fix Pumpkin Overnight Oats looks amazing. Created by Chellie over at Art From My Table, she’s got a super easy recipe to DIY your own pumpkin puree, too (that’s why the puree in these pictures looks so vibrant – it as made from scratch and didn’t come from a can, although you certainly could use a can if you’d prefer).
21 Day Fix Pumpkin Overnight Oats
Don’t forget to pin it for later!
Ingredients:
1/4 cup rolled oats
1/4 cup pumpkin puree (not pie filling)
1/3 cup almond milk
1/2 tsp ground cinnamon
1/8 tsp maple extract
1 scoop protein powder (optional, if you want some added protein)
chopped pecans & dark chocolate chips, optional garnish
Combine oats, pumpkin, almond milk, cinnamon, and maple extract into a pint size jar. Cover, and shake well until all is combined. Place in the refrigerator overnight. Garnish with pecans and chocolate chips before eating.
The 21 Day Fix program is always changing, and while I do my very best and never want to mess up (perfectionist, yo) please always double check the container counts yourself…and that goes for all recipes, not just mine – I’ve seen some super shady ones out there!
Container counts: 1 yellow, 1/4 purple, 1/2 red (if you add protein powder), 1 tsp (if you garnish with nuts and chocolate, be sure to add those containers as appropriate!)
