One thing I love about the 21 Day Fix is that you really do get to choose from a huge list of foods. As long as they’re whole and clean (and not super fatty or salty), they are likely on the approved foods list

But that doesn’t mean you can just go crazy…you still have to track what you’re eating, and unfortunately that applies to carbs, too. Even beans and peas. And to be honest, I just don’t want to waste all my yellow (carb) containers on beans and peas! But I love me some split pea soup.

Split Pea Instant Pot Crock Pot - 21 Day Fix and Weight Watchers

 

This 21 Day Fix Instant Pot Split Pea Soup doubles up on veggies and cuts back on the peas – you still get your pea soup taste and texture, but the bulk of this soup comes from veggies. Serving size: 2 cups

Another thing I love about this soup is that you get a hefty, veggie-packed serving size…but the peas only count as one yellow!

21 Day Fix Instant Pot Split Pea Soup

 

Ingredients:

  • 2T extra virgin olive oil
  • 2 cups onion, diced
  • 2 cups celery, diced
  • 2 cups carrots, diced (or cut into small pieces)
  • 2 cups cauliflower, grated (cauliflower “rice” is perfect for this recipe!)
  • 3 cloves garlic, minced
  • 8 cups non-fat, low-sodium chicken broth
  • 1 1/4 cups diced low-sodium, nitrate-free ham (Kroger has a ham steak that I used)
  • 1/2 lb dried split green peas
  • 1 tp salt (or to taste)
  • 1 tsp pepper (or to taste)
  • 2-3 bay leaves, whole

21 Day Fix Instant Pot Split Pea Soup

Turn the Instant Pot on to saute. Saute veggies and garlic in olive oil until onions begin to turn translucent (about five minutes). 

Add ham. Saute an additional 3-4 minutes. 

Add remaining ingredients. Stir. Turn the pot off to reset it. Place lid on pot and lock in place. Make sure your nob is set to seal, then turn on to the soup setting for 20 minutes.

Remove lid carefully and stir.

This freezes really well, too! 

The 21 Day Fix program is always changing, and while I do my very best and never want to mess up (perfectionist, yo) please always double check the container counts yourself. Sometimes/usally it’s late at night when I write these posts.

Container counts, per serving:

  • 1 red
  • 1 yellow
  • 1 green
  • 1 tsp

Here’s how to make it in the crock pot:

In a pan on the stovetop, saute veggies and garlic in olive oil until onions begin to turn translucent (about five minutes). Add ham. Saute an additional 3-4 minutes.

Add veggie, hamd and all other ingredients to crock pot.

Turn on low for 6-8 hours or high for 4-6 hours (it kind of depends on your crock pot for this). Stir together (peas will be soft when it’s ready to eat).

Sounds tasty! Ham isn’t listed in the ingredients 😉

Hi – Have you tried this without ham? Recommendations to make up for what’s missing I don’t use meat? Thanks.

I followed instructions to a T, but there was way too much liquid. I would recommend maybe doing 1 lb of split peas or less broth. Added thyme as well.
