This Instant Pot Split Pea soup is a new twist on your classic favorite. You get all the flavor but fewer carbs in this veggie-loaded soup. It's 21 Day Fix and Weight Watchers-friendly, too!

2ccauliflowergrated (cauliflower "rice" is perfect for this recipe!)
1 1/4chamdiced, low-sodium, nitrate-free (Kroger has a ham steak that I used)
3clovesgarlicminced
8clow sodium chicken broth
1/2lbdried split green peas
1tspsaltor to taste
1tsppepperor to taste
2-3bay leaveswhole
Instructions
Turn the Instant Pot on to saute. Saute veggies and garlic in olive oil until onions begin to turn translucent (about five minutes).
Add ham. Saute an additional 3-4 minutes.
Add remaining ingredients. Stir.
Place lid on pot and lock in place. Make sure your nob is set to seal. Set on the soup setting for 20 minutes. Let pressure release naturally for at least 10 minutes, then carefully turn knob to vent.
Remove lid carefully and stir.
This freezes well, too!
Crock Pot Instructions
In a pan on the stovetop, saute veggies and garlic in olive oil until onions begin to turn translucent (about five minutes). Add ham. Saute an additional 3-4 minutes.
Add veggies, ham, and all other ingredients to crock pot.
Turn on low for 6-8 hours or high for 4-6 hours (it kind of depends on your crock pot for this). Stir together (peas will be soft when it's ready to eat).
