Soup is the best. I love to make a big batch and eat it for days (I also love to freeze the leftovers, but there are rarely leftovers when I make a batch of soup). This 21 Day Fix Chicken Marsala soup is no exception.
This is perfect for a cool fall evening, but also light enough for a hot summer night. And because it’s made with rotisserie chicken, it’s not too labor or time-intensive to make…this should all come together in less than 30 minutes.

21 Day Fix Chicken Marsala Soup
Prep time: 10 minutes
Cooking time: 16–20 minutes
Serves 6
Ingredients:
3 T. extra virgin olive oil
8 oz. white mushrooms, sliced
Sea salt and black pepper, to taste
4 green onions, ends removed and chopped thin, white and green parts separated
2/3 c. dry Marsala wine
6 c. low-sodium, fat-free chicken stock, preferably organic
3 c. rotisserie chicken, shredded
Directions:
Heat a heavy soup pot or Dutch oven over medium-high heat. Add olive oil and mushrooms and cook, while stirring occasionally, until mushrooms start to release their juices, approximately 6-7 minutes. Season with salt and pepper, to taste.
Add white parts of onion to pan and cook for 1-2 minutes, stirring once or twice.
Increase heat to high and add the Marsala wine. Cook until wine has reduced to 1/3 of its volume, approximately 4-5 minutes.
Add chicken stock and shredded chicken and bring to a boil. Reduce heat to just below medium. Simmer until heated through, approximately 4-5 minutes.
Remove from heat and ladle into individual soup bowls. Garnish with green parts of onion and serve immediately.
The 21 Day Fix program is always changing, and while I do my very best and never want to mess up (perfectionist, yo) please always double check the container counts yourself…and that goes for all recipes, not just mine – I’ve seen some super shady ones out there!

- 1 red (actually, a teeny bit more)
- 1 green
- 1.5 tsp
- the wine was so minimal when spread out across 7 servings, I didn’t count it…but you definitely could! It’s like 1/10th of a yellow.
