Cream butter, cookie butter, light brown sugar and sugar with mixer.
Add egg and vanilla and mix well.
Combine flour, baking soda and salt and whisk to mix together.
Add flour mixture to cookie butter mixture and stir until just blended.
Bake 12-14 minutes until cookies start to get a little golden around the edges. Bring them out of the oven a little earlier than you think necessary for a chewy cookie. If you leave them in until the edges look golden brown and crispy, the cookies will be crispier.
Notes
