This healthy bruschetta toast uses tons of delicious tomatoes, fresh mozzarella and Ezekiel bread. It's 21 Day Fix, Portion Fix, and Weight Watchers approved! You can easily double or triple this recipe.

2Ezekiel bread slices
Instructions
Wash and dry your tomatoes. Cut into halves or quarters depending on your preference.
In a medium bowl, lightly toss the tomatoes, olive oil, balsamic vinaigrette, basil, and garlic.
If you have time, cover the bowl and let it sit in the fridge for a few hours for the flavors to really gel. If you don't have time, that's fine too - it will still be delicious!
Toast your Ezekiel bread.
OPTIONAL: If you have enough teaspoons or points alotted, brush the toast with a small amount of olive oil or butter. If not, skip this step!
Cut the bread in half. Split the mozzarella up evenly across the pieces of bread (it should be about an ounce per piece of bread). Add 1/2 cup tomato topping to each slice. Enjoy!
