These sheet pan fajitas are full of flavor and easy to make. They're great for the 21 Day Fix or Weight Watchers, and they also make great leftovers. Serve with corn tortillas or in lettuce wraps.
3large bell pepperswe used one red, one yellow, and one orange
1large onionsliced
2tbspextra virgin olive oil
1tbspground cumin
2tbspchili powder
salt and pepperto taste
Limesliced
1/2ccilantro leavesroughly chopped
Instructions
Preheat oven to 400F and line a large, rimmed baking sheet with foil or parchment paper. Set aside.
In a large mixing bowl, combine flank steak, peppers, onion, olive oil, cumin, chili powder, salt and pepper. Mix until everthing is well coated.
Spread the steak and pepper mixture onto the prepared baking sheet and roast in pre-heated oven for 15-20 minutes, or until the steak reaches the preferred level of doneness and your veggies are soft and slightly caramelized.
Remove sheet pan from oven and sprinkle with fresh cilantro and a squeeze of lime. Serve on tortillas or with a lettuce wrap.
