Ingredients

  • 2 T extra virgin olive oil
  • 2 c onion diced
  • 2 c celery diced
  • 2 c carrots diced (or cut into small pieces)
  • 2 c cauliflower grated (cauliflower "rice" is perfect for this recipe!)
  • 1 1/4 c ham diced, low-sodium, nitrate-free (Kroger has a ham steak that I used)
  • 3 cloves garlic minced
  • 8 c low sodium chicken broth
  • 1/2 lb dried split green peas
  • 1 tsp salt or to taste
  • 1 tsp pepper or to taste
  • 2-3 bay leaves whole

Instructions

  • Turn the Instant Pot on to saute. Saute veggies and garlic in olive oil until onions begin to turn translucent (about five minutes).
  • Add ham. Saute an additional 3-4 minutes.
  • Add remaining ingredients. Stir.
  • Place lid on pot and lock in place. Make sure your nob is set to seal. Set on the soup setting for 20 minutes. Let pressure release naturally for at least 10 minutes, then carefully turn knob to vent.
  • Remove lid carefully and stir.
  • This freezes well, too!

Crock Pot Instructions

  • In a pan on the stovetop, saute veggies and garlic in olive oil until onions begin to turn translucent (about five minutes). Add ham. Saute an additional 3-4 minutes.
  • Add veggies, ham, and all other ingredients to crock pot.
  • Turn on low for 6-8 hours or high for 4-6 hours (it kind of depends on your crock pot for this). Stir together (peas will be soft when it's ready to eat).
