Optional: replace the cauliflower or mix it with any veggie you like! I have used zucchinibell peppers, and carrots.
Prep your veggies. If you're using cauliflower, grate half a head of cauliflower with your cheese grater. I will sometimes use cauliflower rice (buy it in the refrigerated or frozen section of your grocery store...I get mine at Costco). I think the cauliflower rice is a bit chunky, so I run it through a food processor first. Sometimes, I'll do a big batch and then save it in the fridge until I'm ready to use it.
Mix the cauliflower in a bowl with one egg.
Spray a pan with cooking spray (or use olive oil...the choice is yours!).
Let the pan warm up and then drop the cauliflower and egg mixture into the pan. This makes two "pancakes" - form them into circles with your spatula.
Cook for a few minutes (you'll know it's ready to flip when you can pick up an edge with the spatula and see that the bottom has browned). Flip and cook on the other side.
Serve with a fried egg.
