Something that I’ve learned to love and hate about myself as cook is this: I try to make everything from scratch. Everything. Dips, salsas, dressings, croutons, herb mills…I’ve tried it all. I usually end up flying around the kitchen, stressing about every little detail and not enjoying the process. This weekly meal plan focuses on one of the only things I willingly succumb to as better store-bought than homemade – rotisserie chicken!!!
Let’s be real, it’s time and cost efficient, super easy and, well, delicious! I buy a full rotisserie chicken at the store for $5.99 and it’s ready to go *grateful sigh*. I attempted my own chicken with one of this week’s recipes and even though it tasted (much) better than a store-bought chicken, once mixed with other ingredients, it was difficult to tell the difference. So instead of overheating in my kitchen and going a little crazy, I’ve decided to stick with my good ol’ store bought rotisserie chicken.
Weekly Meal Plan
Chicken Broth (made w/ leftover bones) – do NOT miss out on this!!! I use my homemade chicken broth in so many recipes and, a perk? You can freeze it for up to 3 months!
**I also use leftover Thanksgiving turkey as a substitute for ALL chicken recipes an it’s equally as good, if not better! I’ll take the extra few days of those turkey tryptophan naps while I can 🙂
