I don’t want summer to end – mostly because I don’t want to say goodbye to fresh tomatoes (no offense to all the other veggies out there!!) There is something about these seasonal babes that tastes so much better this time of year, so I tried to stock this weekly meal plan with my favorite fruit-able before having to *dramatic tear* say farewell. Although not every recipe calls for them, break the rules and get creative! Add some leftover cherry tomatoes to your corn salad, chop some Romas to top your garlic bread, heck! – throw some in your shrimp boil while it finishes cooking and let them explode as you bite! Whatever you do with these little gems (ha! you can even use Garden Gem tomatoes if you’re lucky enough to find them!), savor each dish because it will be far too long until they can steal the spotlight again…
