These no-bake peanut butter, honey and cinnamon energy balls are super simple to make (no baking!). They’re delicious, packed with whole food nutrients, and perfect for a quick snack at home or on-the-go.

We spend so much time outside during the fall (yaaaaay, Cool Weather Texas!). These energy bites are perfect to pack up for a busy day (or to stock your freezer). I like to take them with me on my “horse day” – some days I volunteer at a local therapeutic riding center and then visit my hore on the way home.

Peanut Butter, Honey, and Cinnamon Energy Balls

You’ll find lots of ways to enjoy these yummy little balls of deliciousness, too. I swear they taste like cookies!

Yields: 12 balls

Ingredients

Peanut Butter, Honey & Connamon Energy Balls
  • old fashioned rolled oats
  • flaxseed
  • peanut butter
  • honey
  • salt
  • cinnamon

In a food processor, blend the oats and flaxseed.

In a medium bowl, mix the blended oats/flaxseed with the peanut butter, honey, salt, and cinnamon. Stir until all of the ingredients are well-mixed. If the batter feels runny (sometimes natural peanut butter can be oily!), stick it in the freezer for 20-30 minutes to firm up.

Put wax paper on a baking sheet. Roll the batter into 12 balls, about 1″ each.

You can eat them right away, but I prefer to stick them in the freezer for about an hour. Once cold, I place them in a freezer-safe container and store in the freezer until I’m ready to eat them. Which is basically all the time.

And y’all, these thing are delicious! They taste kind of like cookies. 

I toss some of these in a cooler with a bottle of tea and I’m ready for an afternoon at the barn!

I am looking for nutrition information on these also. What about dipping these in dark chocolate ?

I make these often and I add dark choc chips, and seeds. You could also roll them in cocoa…crushed nuts…coconut! Add dried fruits chopped up too…delicious!

im.getting ready to make these just because I’m tired of buying kresteez mix. I am going to add Chia seed in this as well. I will let you know how they turn out.
