Sweet potatoes are my yam. 

Sorry/not sorry. I can never resist a good pun, and I literally went to type out “jam” and the word “yam” just flew from my fingers instead. I couldn’t even help it.

But seriously with these sweet potatoes, you guys. This 21 Day Fix roasted sweet potatoes recipe is so simple and easy, and the resulting taste is so sweet and rich, you’ll feel like you’re cheating on your dinner with pie. But you’re not…you’re actually eating really, really well. In fact, I would venture to say this dish is close to making a suitable pumpkin pie replacement, and if you know how much I love pumpkin pie, you know I am not messing around.

And now on to the sweet potatoes.

I think these are so extra tasty because of the coconut oil. You can sprinkle with a little sea salt (before roasting or after, although the dish pictured here is salt-free). I also feel like some diced green onions might give this a savory flair, but I didn’t have any green onions on hand when I made it, so it just tasted like pie. 

21 Day Fix Roasted Sweet PotatoesMakes 4 servings (just add another potato and 1/2 T oil for every additional serving you want to make)

Ingredients

  • 4 sweet potatoes, peeled and cubed into chunks
  • 2 TB coconut oil, melted
  • Optional: sea salt

21 Day Fix Roasted Sweet PotatoesHeat oven to 400. Peel and dice your potatoes. In a large bowl, combine cubed sweet potatoes and melted coconut oil. Bake on a baking sheet (I actually used a shallow casserole dish with foil, but a baking sheet will work fine as long as the oil can’t drop into the oven) for 35-40 minutes, or until potatoes are soft enough to pierce with a fork. 

The 21 Day Fix program is always changing, and older calculations on other blog posts might need to be recalculated using new container counts. Also, while I do my very best and never want to mess up (perfectionist, yo) please always double check the container counts yourself…and that goes for all recipes, not just mine – I’ve seen some super shady ones out there!

Container counts: 1.5 yellow, 1.5 tsp

I’ve done this but I sprinkle with cinnamon also and spray pan with pure coconut oil spray instead of the oil itself. It’s yummy!!!
