21 Day Fix Mexican Potluck Recipes

 

Okay, so it may only be April, but we all know how fast time has been flying by this year (I’m not alone, right?!?) – Cinco de Mayo is just around the corner!  It’ll be here in a *blink* of an ay ay ayi! #DadJokes

 Mexican food is hands down one of my favorites.  It’s full of flavor – and cheese! – and is always great to serve family style.  These 21 Day Fix Mexican potluck recipes are just what you need to spice up any party.

San Diego always has a blast on Cinco de Mayo – it’s fiesta galore around here!  Poolside potlucks, BBQs throughout the neighborhood, and parties on the beach – it’s our gateway into summer and everyone loves it.  I also love that it’s a snacking holiday, you know what I mean?  Throwing some apps and dips on a table and letting everyone munch is just so much less stressful.  Sun’s going down?  Perfect, BBQ some carnitas and pollo asado and make a taco  bar.  Oh yeah, and I LOVE carnitas 🙂

21 Day Fix Mexican Potluck Recipes

A Cinco de Mayo potluck is a great way to get everyone involved and let them share their favorite recipes.  

• One Step Salsa – 1 Green
• Instant Pot Cilantro Lime Chicken Drumsticks – 1 Red, 1 tsp
• Mexican Lasagna – 1 Yellow, 1 Green, 1 Blue, 1/2 Red
• Taco Dip w/ Scoops – 1 Red, 1 Blue, 1 Yellow, 1/2 Red
• Copy Cat Chipotle Guacamole – 1 Blue
• Shredded Mexican Chicken – 1 1/4 Yellow, 1 Red, 1/2 Green
• Roasted Salsa Verde – 1/2 Green
• Black Bean Hummus Taco Dip w/ Pita Chips – 1/2 Blue, 1/3 Red, 1/4 Orange, 1/2 Yellow

• Cilantro Lime Cauliflower Rice – 1 Green 1 tsp
• Quinoa Taco Casserole – 1 Yellow, 1 Red, 3/4 Green, 1/2 Blue
• Copy Cat Chipotle Pico De Gallo – 1 Green
• Secret Ingredient Queso Dip w/ Homemade Chips – 1 Yellow, 1/2 Blue, 1/2 Green
• Enchilada Beef Dip – 1 Blue, 1 Red, 1/2 Green
• Mini Bell Pepper Nachos – 1 Red, 1 Green, 1/2 Blue

And don’t forget the drinks!!

• Watermelon Margarita – 1 Purple, 1 Yellow
• Strawberry Lime Margarita Sorbet – 1 Yellow treat swap
