The Instant Pot is rocking my world. My current favorite thing to make, because it’s so easy, is oatmeal. I love steel cut oats, and they’re easy to make on the stovetop…but they do take awhile. These 21 Day Fix Peanut Butter Steel Cut Oats are made in the Instant Pot, which cuts the time they take to make way back!

This is also a really great recipes for Instant Pot newbies – oatmeal isn’t scary (or expensive, if you mess it up). But I don’t think you’ll mess it up!

Also, this is a great make-ahead breakfast. And it’s so chewy and hearty…add a couple of eggs and you’ll get your protein in, too (have you hard-boiled eggs in the Instant Pot yet? It’s SO easy!).

21 Day Fix Steel Cut Peanut Butter Oats (Instant Pot)

READ THIS FIRST: This recipe as made using a 6qt Instant Pot. If your pot is larger, you’ll need to adjust accordingly. 

Also, altitude can affect your cook time – here’s a really helpful post about how to adjust your pot for altitude.

Serves: 7 (mine comes out to exactly seven 1/2 cup servings, once carefully measured. Yours may differ a little.

Serving size: 1 yellow container (1/2 cup) 

Ingredients:

  • 1.5 cups steel cut oats
  • 4 cups water
  • 3 tablespoons peanut butter
  • banana or other fruit, for toppings

How to make them:

Add the water and oats to your Instant Pot. Make sure the oats are covered by the water.

Secure the lid and set the pressure release valve to Sealing. Select the Porridge setting, and set the cook time for 12 minutes on high pressure. 

Let the pressure release naturally for 10 minutes. After ten minutes, move the pressure release to Venting to release any remaining steam. Open the lid carefully and stir.

Add the peanut butter and stir until completely mixed in.

It will last for a few days in the fridge, but I freeze mine. I portion it out in a silicone muffin pan like this one, cover it, stick it in freeer, and then when it’s frozen I transfer to a freezer-friendly container.

Top with bananas, strawberries, or nuts.

How do you adjust for an 8qt pot?

Hello! This looks great! When you say you freeze it — what’s the best way to thaw and re-heat?

My oats were still a little crunchy after that amount of time in a 6 quart. Are you using quick oats or traditional? Mine were traditional so maybe that was the issue?

This is my new guilty pleasure. The oats cooked perfectly and it’s just the right amount of peanut butter. Thank you!
