We meal plan pretty consistently, but that doesn’t mean we’re cooking every night. I really believe the key to successful meal planning is realistic meal planning. And for us, that means we’re not going to plan on cooking a gourmet dinner every night of the week, you know what I mean?
We used to include one store-bought freezer dinner every week. This made dinner SUPER easy on those nights (and, I think it’s really helpful to have some food in your freezer that you can pull out when things change at the last minute, because, LIFE).
But a few months ago, we changed the way we eat. We’re eating healthier. We’re not eating nearly as much highly processed food as we used to. We’re reading labels. We’re looking for foods without a lot of added sugars or preservatives.
All of this label reading has meant we’ve quit our usual frozen pizza dinners.
The good news, though, is that we’ve recently found a new Italian meal found in the frozen aisle that we can eat guilt-free (and y’all, I am not even kidding when I say this – it’s SO good).
Michael Angelo’s Signature Line of Italian meals are found in the frozen aisle and made from real ingredients, with absolutely no preservatives or artificial ingredients (I am a label reader, and this was no exception – and this label passes our “ingredients test” for sure!).
Made to order by a family-owned company using fresh ingredients, these are LEGIT. We had the Eggplant Parmesan, which is full of robust flavor. Made with a lightly breaded fresh eggplant, tomato sauce and imported cheeses, this was right up my alley. I served it with a spinach salad (eat your greens!) and called it a night.
We baked it in the oven (you can make them in the microwave, but I really think the oven is the way to go) and ended up eating it all. Best part? Aside from the salad, we didn’t have to prep any food. We pulled it out of the freezer and stuck it in the oven. That. Is. All.
Easy peasy, lemon squeezy (as my five-year-old would say)!
While we loved the Eggplant Parmesan, Michael Angelo’s also makes Shrimp Scampi and Lasagna with Meat Sauce. I haven’t tried these yet, but they are also made from the same clean ingredients that Michael Angelo’s is known for.
