I’m not a vegetarian. In theory, I want badly to be a vegetarian. But in reality?Bacon.

The thing is, I’m a super picky eater when it comes to meat. And as I’m working on improving my health, I’m gravitating towards a plant-based diet most of the time. That doesn’t mean I’m not eating meat, but it means I’m looking for as many non-meat dishes as I can find. Bonus points if the kids will eat them, and quadruple bonus points if I can make them in the crock pot.

As I’ve been planning meals and looking for healthy (and easy) dinner options, I’ve stumbled across a ton of vegetarian crock pot recipes and was inspired to put together a post of some that looked really intriguing. I’ve got a little bit of everything here, from breakfast, to dinner, to side dishes.

I’m not a vegetarian but I have several friends who are. Thank you for sharing more recipes that I can make for them when I have them over. Thanks for sharing at Inspire Us Thursday on Organized 31.

I’ve been a vegetarian for just more than a year and my vice was turkey pepperoni. I’d always been a picky meat eater, too. But that was for me how bacon is for most of the world. A year later I don’t think about it all that often. My favorite recipe so far has been the BHG in your sleep chili but I substitute veggie crumbles for ground beef and it eliminates having to brown beef so it’s faster to throw together!

Thanks for the recipes. I love matar paneer, and I make it all the time. Imagine how excited I was to see a possible crock pot version! Unfortunately, while the link that’s given takes us to a great recipe, it’s the normal way of cooking it – no crock pot.

Hi Kristi! I could not for the life of me figure out why I would have included this recipe if it wasn’t a crock pot recipe! I went to Pinterest (which is where I found these) and searched for Crock Pot Matar Paneer. Someone had pinned this recipe and commented that they threw all the ingredients into a crock pot and it turned out great. Apparently I saw that and included it, even though you’re right – this is definitely a “regular” recipe and not made for the crock pot. I haven’t tried it in the crock pot so I can’t say if it would work or not. Sorry about that!
